What Is Kibbe? Meet Our Signature Dish
Kibbe (also spelled kibbeh or kibbee) is a beloved dish across the Middle East and the Armenian table, made from finely ground beef, bulgur wheat, onions, and a careful blend of spices. At Salma’s Kitchen, it is our signature, and the dish people come back for.
What goes into kibbe
Good kibbe is about texture as much as flavour. The beef is ground fine and worked together with bulgur wheat, grated onion, and spices until it holds together. Ours is shaped, then cooked so the outside turns golden while the inside stays tender and savoury.
It is the kind of food that takes patience, which is exactly why it means so much to us. Back home, making kibbe was a family affair, with more than one pair of hands around the bowl.
How we serve it
Our kibbe comes as a meal: four pieces with fragrant rice, a fresh salad, and your choice of dip (hummus, baba ganoush, or muhammara). It is filling, comforting, and a good introduction to everything we cook.
Why it is our signature
Every kitchen has one dish that says who they are. For us it is kibbe, because it carries the effort, the spices, and the care that our family has always put into feeding people. If you want to understand Salma’s Kitchen in a single bite, start here.
